• 1 cup of water
• 1 cup of mayonnaise
• 1 tablespoon lemon juice

Rather than mixing, the classic types of chicken casserole recipes calls for layering. Preheat the oven to 350 degrees, and then mix the soups, lemon juice, mayonnaise, water and cheddar cheese in a saucepan over medium heat until fully melted. Next, spray a light coating of cooking spray in your casserole dish, and then create a bed using the broccoli. Create the next layer with the chicken followed by the sauce. Create the top layer with the crackers, and then bake for 30 minutes or until bubbling.

This basic recipe, which provides 12 servings, calls for plain, unsalted crackers. However, you can use flavored crackers. Cheddar cheese flavored crackers are a particularly popular choice. If you choose salted crackers, you may want to opt for unsalted soups in order to balance it out a bit.

Low-calorie, Low-fat Chicken Casserole

• 2 cups skinless chicken breast chopped
• 8 ounces long grain wild rice
• 1 can cream of celery soup
• 16 ounces French-cut green beans
• 2 tablespoons onion, chopped
• 2 tablespoons pimento, chopped fine
• 1/2 cup water chestnuts, sliced
• 1/2 cup light mayonnaise
• 1/4 teaspoon salt
• 1/8 teaspoon pepper
• 1/2 teaspoon paprika

Preheat the oven to 350 degrees, and then prepare the rice by following package directions. After the rice cooks, use a mixing bowl to combine it with the beans, chestnuts, chicken, mayonnaise, onions, pepper, pimento, salt and soup. After thoroughly mixing, put the mixture into the casserole dish. Sprinkle the paprika on top, and then bake for 30 minutes or until bubbling. These chicken casseroles provide 12 servings at 180 calories and 10 grams of fat per.

What is a Chicken Casserole?

The word casserole derives from the French word for saucepan. It indicates a large, deep dish that is appropriate for baking in an oven but also for serving afterward.
